Description
Danche is the second of the two washing station owned by SNAP in Yirgacheffee worka chelchele area. Eight/8/ km east away from Gedeb town and located at 2300masl,the specific station gets most of its cherries from the 742 farmers from the surrounding hills, and farmers often walk for up to one hours to deliver their cherries to the station.
Hand-picked and sorted red cherries, which were then packed tightly inside large plastic barrels where an airlock system prevented any oxygen from entering.After144 hours in barrels, the pulped coffee is removed and laid out on 150 raised beds with the cherry still intact, where it was dried slowly up to 10 days. This controlled fermentation process has increased the overall quality of the coffee.
